Below is another cool weather easy recipe that is a keeper! I have made this many times varying the vegetables and with or without meat. Hope you like this as much as my family does!
As you can see by the yellowed page, I have used this a lot through the past 20 yrs. or so. The original recipe came in a little booklet included in the pages of a magazine as a Bisquick ad.
It says Impossible Green Bean Pie but I have rarely used Green Beans even though it is good with them!
1. Frozen green beans/spinach/mixed vegetables (your choice) thawed and brought to boil, then drained well.
2. 1 cup shredded Cheddar cheese
3. 1 1/2 C. of milk
4. 3/4 cup Bisquick or Jiffy mix
5. 3 eggs
6. 1 tsp. salt (or less to taste)
7. 1/4 tsp pepper
Optional: 1 can of mushroom stems and pieces or sometimes I brown Hamburger meat and add that. 1/2 C onions.
Heat the oven to 400 degrees. Grease a 10" pie plate. Cook green bean (thawed) for 5 minutes uncovered. Drain. Mix beans (or any of the above options) mushrooms, onion, and cheese in plate. Beat remaining ingredients until smooth. (1 minute with hand mixer or 15 seconds in blender). Pour into plate. Give a little stir with a fork to blend and bake until a knife inserted between center and edge comes out clean. 30-40 minutes. Let cool 5 minutes and serve! Delicious! A whole meal in a pie plate! yields 6-8 servings. Slice as pie.

I use frozen mixed vegetables most often: corn/carrot mix.
