Low Fat Meatless Lasagna

Here is my own recipe for:

  Low Calorie Meatless Lasagna

1 Box of Lasagna Strips par boiled.
1 Large container of Low Fat Cottage Cheese
   (substituted for Ricatta Cheese)
1 bag of shredded Mozarella
1 Large can of Hunt's Meat Flavored Sauce

After parboiling the Lasagna strips, start layering them in a large oblong casserole dish sprayed with cooking spray sides and bottom.  Between each layer, add cottage cheese and shredded Mozarella, and some of the sauce.  Keep layering until dish is filled and top with more Mozarella.
Bake in 350 degree oven for 30 to 40 minutes or until mixture is bubbling and cheese on top is melted.
  This recipe has a lot less calories and no one even notices it is meatless because of the meat flavored sauce.  I never have left overs when I serve this to family or company!  But it can be frozen to serve again later.

And for dessert?  NO BAKE CREAM PIE
   This is a wonderful, ice cream type dessert.  Recipe makes 2 1 crust pies, one for now and one for later!
  1 Large Cool Whip
  1 Can of Eagle Brand Condensed milk. (I use low fat)
  1/4 cup of Lemon Juice
  1 Can of crushed Pinapple (drained well)
  1 cup of broken walnuts or pecans (optional)
  2 Graham cracker crusts or 2 frozen pie crusts baked before hand for filling.

Mix all ingredients until fluffy by hand with spoon.  Pour into prepared crusts or baked pie shells.  Refrigerate overnight or at least 1 hour before serving. This can be frozen also.  Optional toppings:  Coconut flakes on top, fresh strawberries, or canned cherries.  Makes 2 pies.  These won't last long!

These look so good and easy! I have made lots of those no bake pies, but this is a new one on me, and it looks so good, I will try it. I bought the ingredients for your chicken stew and am making it for dinner tomorrow! Can't wait.

Good Morning Sweetie...
I knew they were coming. I had been sworn to secrecy. I know you two will have such a wonderful time together. Wish I could be there for tea also. Marydon loves tea.

I am so thrilled she was able to pop over and visit a few of you ladies, I only wish that I could have came along too. I will be there in spirit.
